Cooking with Trader Joe’s Cookbook – Easy Lunch Boxes is a delightfully different cookbook, born from social media. Through the online network that grew around her EasyLunchboxes products, Kelly discovered a world of bloggers and parents whose ideas for attention-grabbing, healthy food matched her own ingenuity – so she brought them together for this book.
Among the book’s 32 contributors are popular food bloggers Marla Meridith (the book’s food stylist and photographer), Aviva Goldfarb, Leslie Durso, and Lisa Leake, with a foreword by food activist Bettina Elias Siegel. The cookbook offers options for the entire family, including vegetarian, vegan, and gluten-free offerings.

This cookbook is amazing! I love it! I found it very colorful, easy to read, and the pictures are just mouth-watering! It has recipes for everyone-fast and easy meals, creative meals, vegan and gluten-free meals, and more.
I love that Cooking with Trader Joe’s Cookbook: Easy Lunch Boxes is made for moms like me-busy and on the go. I don’t have time to make lunches in the morning so I pack my kids’ and my lunch at night. My kids’ lunches are either turkey and cheese sandwiches or peanut butter and jelly sandwiches with a piece of fruit and a juice box.
That gets kind of boring. I normally just toss a Lean Cuisine meal in my bag with some fruit cups and some almonds and run out the door. I realize that is probably not the most healthiest choice. I am a creature of habit. I like things that are fast and easy.
Before this cookbook, I didn’t realize that there were so many creative and nutritious possiblities for my kids’ and my lunch. This is a great tool to help simplify packing lunches. Each recipe gives you the nutritional information, how long it takes to make, and gives you ideas on possible sides. Just what I need!
You can tell that Kelly has a passion for helping families make healthy nutritious meals. Kelly shares with readers her memories of her mom’s cooking. I had to laugh because I felt like she was describing me-a mom with no time to prepare good meals. I usually plan the same meals each week.
Remember I said I was a creature of habit? Since I am a single mom who works full-time, I don’t have the time to spend hours in the kitchen making meals for my kids.
But Kelly solves all this with her cookbook. You need to go get your copy. You won’t be dissapointed.
